Butter Lettuce & Fig Salad with Bacon and blue Cheese Recipe

  1. In a small bowl, whisk together shallots and vinegars.
  2. While whisking, drizzle in the olive oil in a slow, steady stream until the dressing comes together.
  3. Whisk in salt and pepper.
  4. In a large bowl, combine the lettuce, figs, blue cheese and bacon.
  5. Toss in the desired amount of vinaigrette and season to taste with salt and pepper.
  6. Serve immediately.
  7. Alternatively, you can just dress the lettuce and put desired portion on each plate, top with bacon, figs and blue cheese.
  8. Drizzle with a little more dressing.
  9. I find this works better to get the desired amount of cheese, bacon and fig for each serving.
  10. It also keeps the lettuce a little crisper.
