Kale and chorizo soup
- 1 onion, chopped
- 2 tbsp olive oil, extra virgin
- 2 clove garlic
- 50 grams cubed chorizo
- 5 new potatoes cubed
- 700 ml chicken stock
- 150 grams kale finely shredded
- 1 salt and pepper to season if wanted
- Sweat the onion on a low heat so that they don't colour but soften.
- For about 7 minutes.
- Add chopped garlic and chorizo in cubes and sautee for 2 minutes
- Add the cubed potatoes and cook for further 3 minutes
- Add the stock.
- Bring to the boil and simmer for 10 minutes or until potatoes are tender.
- (You can season now but I found this soup tasty enough with the chorizo flavour alone plus the stock seasoning)
- Mash a bit the potatoes
- Bring back to the boil.
- Add finely shredded kale and cook further 5 minutes.
- Stir and serve
