Kale and chorizo soup

  1. Sweat the onion on a low heat so that they don't colour but soften.
  2. For about 7 minutes.
  3. Add chopped garlic and chorizo in cubes and sautee for 2 minutes
  4. Add the cubed potatoes and cook for further 3 minutes
  5. Add the stock.
  6. Bring to the boil and simmer for 10 minutes or until potatoes are tender.
  7. (You can season now but I found this soup tasty enough with the chorizo flavour alone plus the stock seasoning)
  8. Mash a bit the potatoes
  9. Bring back to the boil.
  10. Add finely shredded kale and cook further 5 minutes.
  11. Stir and serve
