Rainbow Summer Salad
- 1 large Avocado
- 1 can corn
- 1 can black beans
- 1 green onion
- 1 bell pepper (your choice of color)
- 1 diced chicken (this is a good use for leftover rotisserie)
- 1 Cilantro
- 1 large Zucchini
- 2 large limes
- 1 garlic salt
- Chop all ingredients (except for limes, and cilantro) into bite size pieces.
- Finely chop cilantro and add to other ingredients
- Juice both limes and add juice to chopped ingredients
- Add garlic salt as desired
