Shrimp Scampi
- 4 teaspoons olive oil
- 4 medium garlic cloves, crushed
- 1 cup vermouth, dry red
- 2 cups diced tomatoes
- 1 12 lbs large shrimp, shelled & deveined
- 1 cup fresh parsley, chopped
- hot pepper sauce, several drops
- salt & freshly ground black pepper, to taste
- 4 cups cooked rice (optional)
- Heat the olive oil in a nonstick skillet over medium-high heat.
- Saute the garlic for a few seconds, then add the red vermouth and tomatoes.
- Cook 5 minutes.
- Add the shrimp and parsley, cook 3 mins, or untill shrimp are pink.
- Season with hot pepper sauce, salt & pepper, to taste.
- Serve over hot rice if desired.
