Berry Gazpacho Recipe

  1. Bring first 3 ingredients to a boil in a large saucepan over medium-high heat; boil till reduced to 1 1/2 c.. Cover and chill.
  2. Pour wine mix through a wire-mesh strainer into a large bowl, discarding bean and mint.
  3. Process strawberries and 1/2 c. water in a blender till smooth; pour through wire-mesh strainer into wine mix, discarding seeds.
  4. Stir in honey and next 4 ingredients; chill.
  5. Serve with raspberry sorbet.
  6. Garnish, if you like.
  7. Yield: 8 c.
