sig's Cream of Spring & Onion(s) Soup

  1. melt the butter add onions,chives, garlic and spring onions, cook gently until all soft, do not brown, this takes about 10-15 minutes.
  2. Add the chopped potatoes and the stock.
  3. Bring to a gentle boil, cover and simmer for about 25 to 30 minutes until potatoes are soft.
  4. Puree until very smooth.
  5. If you want to eat this soup hot add the cream and season.Gently reheat then add the lemon juice
  6. If you want to eat this soup cold , pour into large bowl , stir in the cream and lemon juice and then season.Chill for at least one and a half hours.
  7. Garnish with spring onions and chives
