Caprese-Style Tomato and Avocado Cold Pasta
- 80 grams Spaghetti (thinner spaghettini is better)
- 1 large Tomato (ripen)
- 1/3 of 100 grams Mozzarella cheese
- 1/4 Avocado
- 1 dash Lemon juice
- 4 leaves Basil
- 1/2 clove Garlic
- 1/2 tsp Salt
- 1 1/2 tbsp Extra virgin olive oil
- 3 olives Olives (thinly sliced)
- 3 leaves Basil
- 1 dash Black pepper (ground right before eating if you can)
- Cut the avocado into 1 cm cubes, and sprinkle with lemon juice.
- Cut the Mozzarella cheese into 1 cm cubes as well.
- Grate the garlic.
- Remove the stems from the tomato.
- Peel the tomato by blanching in boiling water for a few seconds, and remove the seeds.
- Cut into 1 cm cubes, and sprinkle with the salt.
- Add the Step 1 avocado, Mozzarella cheese, garlic to Step 2.
- Tear in the basil as well, and mix.
- Add the olive oil, mix well, and chill in the fridge.
- Boil the pasta in salted water following the package instructions.
- Soak in cold water to cool, and drain well.
- Add into the Step 3 bowl, and mix well.
- Serve on a chilled plate and ground black pepper on top.
- Garnish with olive slices and basil and you're done.
