Three Bean Salad
- 2 cups baked beans, canned
- 2 cups lima beans
- 2 cups green beans, canned
- 1 each sweet bell peppers
- 1 each onions
- 250 grams bacon
- 250 grams mushrooms, button
- 50 millilitres olive oil, extra-virgin
- 1 tablespoon honey
- 1 tablespoon dijon mustard
- 1 each lemon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup parsley flakes
- Chop the onion, slice the peppers and place with the 3 beans in a salad bowl.
- Thinly slice the mushrooms, chop the bacon into small bits and fry until crunchy.
- Add to the beans.
- Whisk the olive oil, honey, mustard, juice of the lemon, salt and pepper until a thick sauce and pour over the bean mix.
- Add the parsley, mix well and refrigerate for 1 hour.
