Beef and Brie Sandwich With Green Chili Mustard-Mayonnaise
- 1 12 cups mayonnaise
- 1 cup Dijon mustard
- 12 cup hot canned green chili
- 12 ounce garlic
- 48 slices pumpernickel bread or 48 slices dark rye
- 24 lettuce leaves
- 3 lbs roast beef, thinly sliced
- 2 14 lbs brie cheese, sliced
- 1 lb cornichon pickle, sliced lengthwise
- 2 14 lbs tomatoes, sliced
- Combine mustard, hot chiles and garlic in food processor or blender; process until smooth.
- Add mayonnaise to mustard mixture and stir until combined.
- Cover and refrigerate.
- For each sandwich spread 2 bread slices with 1 tablespoon mayonnaise mixture each.
- Top with lettuce, beef, cheese, cornichons and tomatoes.
- Top with remaining bread slice.
