PUMPKIN WHOOPIE PIES
- 2 cup packed brown sugar
- 1 cup vegetable oil
- 2 eggs
- 3 cup all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1 egg whites
- 2 tbsp milk
- 1 tsp vanilla extract
- 2 cup powered sugar
- 3/4 cup shortening (I used crisco)
- 1 1/2 cup pumpkin
- Preheat oven to 350.
- Lightly grease cookie sheet or i used parchment paper.
- Combine oil, br.sugar.
- Mix in pumpkin.Add the 2 eggs beating well.
- Add flour, salt, b.powder, b.soda, vanilla and spices.
- Drop by heaping teaspoonful.
- ( I used small cookie dipper) onto cookie sheet.
- Bake 10 to 12 minutes.
- Just check for doneness..
- Let them Cool.
- Make filling with last 5 ing.
- Beat egg white and mix with milk and vanilla.
- Add 1 cup p.sugar.mix well.
- Beat in shortening and remaining sugar.
- Beat until fluffy.
- ( don't add pumpkin to this)..
- Take 2 cookies for top and bottom.
- Put about 1 tbsp.
- Filling on one.
- Put other one on lighly press them together.
- You are done.
- Fill them all that way....
