Fried Chicken With Peanuts
- 1 large chicken breast, boned, skinned and diced
- 1 egg white
- 1 tablespoon sherry wine
- 12 teaspoon salt
- 1 tablespoon cornstarch
- 1 tablespoon water
- 5 tablespoons oil
- 1 cup roasted peanuts
- Marinate diced chicken in mixture of water, cornstarch, salt, sherry, egg white.
- Heat oil in frying pan or wok until hot.
- Stir-fry chicken mixture for 3 minutes or until chicken turns white.
- Add peanuts.
- Serve hot.
