Greek Lentil Soup Recipe
- 2 c. uncooked lentils
- 8 c. water or possibly vegetable stock
- 1/2 onion, minced
- 1 stalk celery, minced
- 1 sm. potato
- 2 tbsp. oil
- 2 bay leaves
- 1 1/2 - 2 teaspoon salt
- 2 teaspoon vinegar
- Mix all ingredients, except vinegar, and cook till lentils are very soft, about 1 hour.
- Add in vinegar and serve.
