Summer Harvest Stew

  1. Heat oil in large dutch oven.
  2. Add onions and garlic, cook till onions are translucent.
  3. Reduce heat, add potatoes, bell peppers and tomatoes.
  4. Season with garlic salt and pepper.
  5. Cover and cook till potatoes are tender, stirring occasionally and adding water as needed.
  6. Serve over rice or pasta.
