Easy Enchilada Sauce (Red)
- 2 tablespoons oil
- 2 tablespoons flour
- 14 cup Mexican chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 12 teaspoon garlic powder
- 1 tablespoon turbinado sugar
- 1 12 cups chicken broth
- 1 cup tomato sauce
- salt
- 14-1 teaspoon cayenne pepper (optional)
- heat oil in medium saucepan.
- whisk in flour until smooth.
- stir in spices, cook 1 minute.
- whisk in broth until smooth.
- add the tomato sauce, and salt and cayenne pepper to taste.
- bring to a boil, reduce heat and simmer about 15 minutes.
- this is wonderful made a day ahead, the flavors combine even more.
