Northwest Bounty Bruschetta
- 1 (8 ounce) sourdough baguettes, sliced 1/4-inch thick
- 3 tablespoons olive oil
- 13 cup onion, chopped
- 1 cup granny smith apple, peeled and chopped
- 1 teaspoon maple syrup
- 14 cup dried cherries
- 1 12 teaspoons horseradish
- 23 cup blue cheese, crumbled
- 13 cup hazelnuts, chopped
- Brush bread with 2 T oil and broil until golden, turning once, about 5 minutes.
- In a frying pan over medium heat, saute onion with remaining oil until golden.
- Add apple and syrup, cook 5 minutes.
- Let cool slightly.
- Stir in cherries, horseradish, and cheese.
- Spoon over toast and top with nuts.
