Winter Vegetable Gratin
- 14 fresh pumpkin, peeled, seeds removed, diced
- 2 parsnips, peeled, diced
- 1 leek, finely sliced
- 2 small fennel bulbs, finely diced
- 200 g creme fraiche
- 12 cup milk
- 2 eggs, beaten
- salt and pepper
- 23 cup parmesan cheese, grated
- Heat oven to 190C.
- Lightly grease baking dish.
- Scatter finely diced vegetable over base of dish.
- In a bowl whisk milk, eggs and creme fraiche together.
- Season well, pour mixture over vegetables.
- Scatter cheese over top.
- Bake 35 - 45 minutes till vegetables are cooked.
