Sizzling Mexican Pork Skillet

  1. Marinate pork with taco seasoning and sherry for at least one hour.
  2. Preheat oven to 350.
  3. In oven going skillet saute pork until cooked through.
  4. Remove and saute onion and peppers until onions are translucent.
  5. Remove from skillet.
  6. Spread cooked rice in bottom of skillet and top with meat and veggies.
  7. Cover with cheese.
  8. Bake 10 to 15 minutes until cheese is melted.
