Best Bran Muffins
- 2 cups 100% bran
- 1 cup applesauce
- 4 eggs
- 5 cups flour
- 1 teaspoon salt
- 2 cups boiling water
- 3 cups sugar
- 2 cups milk
- 2 tablespoons vinegar
- 5 teaspoons baking soda
- 4 cups kelloggs all-bran cereal
- Soak 100% bran in boiling water.
- Let cool.
- Cream together applesauce, sugar and eggs.
- Combine with soaked bran.
- Mix together milk and vinegar.
- Add milk mixture alternately with flour, soda and salt.
- Mix well.
- Stir in All-Bran.
- add fruit if desired.
- fill muffin tins 3/4 full.
- Bake at 375* for 18-20 minute Check often to decide time for your oven.
