Pork and Bok Choy Yakisoba Noodles with Oyster Sauce, Mayonnaise and Garlic

  1. Cut up the bok choy and pork into bite-sized pieces.
  2. Cut the onion into 5 mm wide wedges.
  3. Combine the ingredients in a bowl.
  4. Boil the uncooked Chinese noodles.
  5. Drain, and rinse the noodles, and drain well.
  6. Place in a boil and coat with a little oil (not listed in ingredient list).
  7. Heat some oil in a frying pan and stir-fry the pork and garlic over high heat.
  8. When the pork is cooked, add the bok choy and onion and continue stir-frying.
  9. Once the vegetables are cooked, add the noodles and the ingredients, and stir-fry over high heat.
  10. When the sauce has coated the noodles completely, turn off the heat.
  11. Taste, and adjust the seasonings if needed with salt.
  12. Drizzle with sesame oil to finish.
  13. Transfer to serving plates and top with coarsely ground black pepper and mustard paste to taste.
