Hearty Date Bran Muffins
- 1 cup chopped dates
- 34 cup red river cereal
- 1 12 cups hot water
- 12 cup packed brown sugar
- 1 teaspoon lemon juice
- 1 12 cups natural bran
- 34 cup flour
- 1 14 teaspoons baking soda
- 1 teaspoon salt
- 1 egg
- 12 cup packed brown sugar
- 1 cup buttermilk (if you don't have any, use 1 tablespoon lemon juice and enough milk to make 1 cup)
- 1 tablespoon oil
- FILLING:.
- Combine all ingredients in saucepan, simmer 5 minutes.
- Set aside to cool.
- BATTER:.
- Combine 1st four dry ingredients in large mixing bowl.
- Beat remaining ingredients together to blend Add with date mixture to dry ingredients.
- Mix well.
- Spoon into greased muffin tins.
- Bake at 375*F (190*C) for 20-25 minutes, or until top springs back when lightly touched.
