College Student's Easy Red Beans and Rice
- 1/2 cup Uncle Ben's 30 minute Brown Rice
- 1 can Amy's organic cream of mushroom soup (or your favorite brand)
- 1 can pinto beans, drained slightly
- Black pepper, to taste
- Prepare rice according to package instructions.
- After rice has absorbed the water, add remaining ingredients and simmer until warm (about 5 extra minutes).
- If you like the Louisiana heat of red beans and rice, use freshly ground peppercorns.
