Creamy Turkey Croquettes Recipe
- 1/4 c. butter
- 1/4 c. flour
- 2 tbsp. chopped onion
- 1 teaspoon salt
- 1/2 teaspoon poultry seasoning
- 1/8 teaspoon pepper
- 3/4 c. lowfat milk
- 2 c. finely minced, cooked turkey
- 2 tbsp. chopped parsley
- 1 egg, slightly beaten
- 2 tbsp. water
- 1/2 c. dry bread crumbs
- 3/4 c. salad oil
- Heat butter in a saucepan.
- Add in flour, onion, salt, poultry seasoning and pepper and blend.
- Gradually add in lowfat milk and cook over a low heat till thickened.
- Stir in turkey and parsley.
- Mix thoroughly.
- Pour mix into a shallow pan and refrigeratein refrigerator for several hrs.
- Shape mix into 6 flat croquettes.
- Mix beaten egg and water.
- Dip croquettes in bread crumbs, then egg mix.
- Then bread crumbs.
- Heat electric fry pan to 390 degrees.
- Add in salad oil, and fry croquettes for 3 to 4 min on each side or possibly till golden.
- Drain on absorbent paper.
- Makes 6 croquettes.
