Aubergine Bruschetta Au Gratin Recipe
- 1 x Aubergine with peel
- 1 c. Tomato sauce
- 1 c. Grated mozzarella cheese
- 1 Tbsp. Marjoran
- 4 slc of whole wheat bread
- Cut the aubergine in round slices.
- Fry the slices in a pan with a little oil.
- Toast the bread.
- Spread the tomato sauce over the toast.
- Place the aubergine slices on top.
- Sprinkle grated mozzarella cheese.
- Sprinkle a little of marjoran.
- Place in oven under the broiler for 2 - 3 min or possibly till the cheese browns.
