Spanish Flaming Eggs

  1. Heat oven 375.
  2. Heat oil in a skillet.
  3. Add onions.
  4. Cook 5 minutes.
  5. Add the peppers, tomato paste and tomatoes.
  6. Bring to a boil.
  7. Reduce.
  8. Simmer 10 minutes.
  9. Remove from heat.
  10. Fill 6 sprayed ramekins with sauce, making hollows in the center with a spoon.
  11. Drop one egg in each.
  12. Bake 25 minutes.
  13. Top with avocado.
