Savory Mushroom Toasts
- 1 whole Small Baguette, Sliced Into 12 Slices
- 2 Tablespoons Butter
- 6 ounces, weight Mushrooms, Roughly Chopped
- 2 whole Green Onions, Thinly Sliced
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Fresh Ground Pepper
- 2 Tablespoons Half-and-half
- 1/4 cups Parmesan Cheese, Grated
- 1 Tablespoon Parsley, Chopped
- Place slice baguette on a baking sheet and broil just until they start to brown; turn and place back under broiler for about one minute.
- Set aside.
- Place butter in skillet over medium heat.
- When melted, add mushrooms, green onions, salt and pepper.
- Cook about 4 minutes or until mushrooms are soft.
- Add half-and-half, Parmesan and parsley; stir and cook for about 2 minutes.
- Spoon over toasts and place under the broiler for about 2 minutes.
- Watch carefully and remove when edges of the bread start to brown.
- Serve immediately.
