Chicken and Sweet Italian Sausage Stew
- 2 Tablespoons Oil
- 1 pound Sweet Italian Sausage, 1-inch Pieces
- 1 whole Chicken, Cut Into 8 Pieces
- 1 whole Medium Onion, Chopped
- 3 cloves Garlic Cloves, Chopped
- 2 teaspoons Chili Powder
- 2 cans 28 Oz, Each, Crushed Tomatoes
- 2 teaspoons Ground Cumin
- 2 Tablespoons Savoury
- 1 teaspoon Marjoram
- 1 Tablespoon Dried Oregano
- 1 teaspoon Italian Seasoning
- 1 teaspoon Red Wine Vinegar
- 10 ounces, fluid Dried Fusilli, Cooked
- Have all your ingredients ready to go, and this casserole will come together easily.
- Place oil in large heavy skillet; add sausage and brown.
- Remove and drain sausage.
- Set aside.
- Add chicken pieces to skillet in hot fat, skin-side down, and brown.
- Turn and brown on other side.
- Remove from skillet, and set aside.
- Add onion, garlic, and chili powder and cook for 2 minutes.
- Stir in tomatoes, cumin, savoury, marjoram, oregano, Italian seasoning, and red wine vinegar.
- Return both sausage and chicken to skillet.
- Cover.
- Bring to boil; reduce heat to medium or even low, and cook 45 minutes, until chicken is completely done.
- Remove chicken, boil down sauce briefly, and then return chicken to the skillet.
- Serve over fusilli, or your favourite pasta.
