Cottage Potatoes

  1. Cook potatoes in boiling water to cover 30 minutes or until done; drain.
  2. Allow to cool to the touch.
  3. Peel and dice.
  4. Saute onion and green pepper in butter until tender.
  5. Combine potatoes, onion mixture, salt and remaining ingredients; stir gently.
  6. Spoon into a lightly greased 13 X 9-inch baking dish; cover and bake at 400F for 30 minutes.
  7. Remove cover; and bake an additional 10 minutes.
