Sweet & Savory Mashed Sweet Potatoes #SP5

• 1 (24 ounce) package Simply Potatoes Mashed Sweet Potatoes
• 12 cup pesto sauce (homemade or store bought)
• 4 -6 slices bacon, cooked and chopped into bits
• 1 tablespoon maple syrup
• salt & pepper

1. Preheat the oven to 350.
2. Prepare mashed sweet potatoes per package instructions.
3. Set aside.
4. Make a pesto using basil, olive oil (or oil of choice), and pine nuts (or a nut of choice).
5. Alternately, use prepared pesto from the store.
6. Cook bacon in a pan 6-7 minutes per side.
7. Let it cool, then chop into bits.
8. Combine the pesto, bacon, maple syrup and salt and pepper to the mashed sweet potatoes, and place in a baking dish.
9. Bake the potatoes for 20 minutes, or until heated through.
10. Enjoy!
