Martini by the Sea

  1. Heat a large, dry skillet; toast almonds, stirring, until golden-brown, about 2 minutes.
  2. Do not overcook.
  3. Remove from skillet; set aside.
  4. Heat water, vermouth and 2 teaspoons salt in skillet to a simmer.
  5. Add fillets; simmer until fish just turns opaque and flakes easily, about 5 minutes.
  6. Remove fillets; add salt and pepper to taste.
  7. Top with butter, almonds and parsley; squeeze lemon juice to taste.
