Squash Ceviche with Blueberries and Jalapeno (Raw, Vegan)
- 1 whole Yellow Squash
- 1 whole Spring Onion Or 1/4 Regular Onion
- 1 clove Garlic, Peeled
- 1/2 whole Fresh Jalapeno
- 1 whole Lime, Juiced And Zested, Zest Reserved
- 1/4 cups Fresh Blueberries
- 1 Tablespoon Torn Parsley Leaves
- Using a mandoline or very sharp knife, thinly slice the squash, onion, garlic and jalapeno.
- Put the veggies into a bowl.
- Toss the vegetables with the lime juice and let salad sit for 20-30 minutes until slightly softened.
- Add the lime zest and blueberries and stir together right before serving.
- Serve with a slotted spoon to eliminate some of the juices topped with the parsley.
- Enjoy!
