Squash Ceviche with Blueberries and Jalapeno (Raw, Vegan)

  1. Using a mandoline or very sharp knife, thinly slice the squash, onion, garlic and jalapeno.
  2. Put the veggies into a bowl.
  3. Toss the vegetables with the lime juice and let salad sit for 20-30 minutes until slightly softened.
  4. Add the lime zest and blueberries and stir together right before serving.
  5. Serve with a slotted spoon to eliminate some of the juices topped with the parsley.
  6. Enjoy!
