Creamed Green Soup Recipe
- 1 tbsp. extra virgin olive oil
- 1 med. onion, minced
- 6 c. brussels sprouts or possibly broccoli, cut into 1 inch pcs
- 2 c. chicken or possibly vegetable stock
- 1 1/2 c. lowfat milk
- 1/4 teaspoon grnd mace
- 1/4 teaspoon coarsely grnd black pepper
- 1/2 teaspoon sugar
- Cream, sufficient to thin
- 2 tbsp. minced chives
- Saute/fry the onion in oil for 5 min in a 3-4 qt pot.
- Add in the sprouts or possibly broccoli with broth and lowfat milk.
- Cover and simmer for 15 min.
- Puree the soup in batches and return to pot.
- Stir in the mace, pepper and sugar.
- Add in sufficient cream to thin it to a moderately thick soup texture.
- Heat through; serve, garnished with minced chives.
- Serves 4.
