Strawberry Ginger Daquiri

  1. Combine the strawberries, rum, lime juice, Simple Syrup and ginger in the carafe of a blender and puree until smooth.
  2. Pour into frozen drink glasses and garnish with sliced strawberries.
  3. Serve immediately.
  4. Combine the sugar and 1 cup water in a small saucepan and bring to a boil.
  5. Cook, stirring, until the sugar dissolves.
  6. Remove from the heat and let cool completely.
  7. Keep covered in the refrigerator up to 1 month.
  8. Yield: 1 1/2 cups
