Zucchini salad

  1. Wash the zucchinis.
  2. take a vegetable peeler, or mandolin and slice long ways into ribbon thin slices.
  3. Zest and Squeeze the lemon.
  4. To that add oil, salt, and parsley flakes.
  5. Mix well
  6. Toast the pistachios.
  7. Add the dressing to the zucchini.
  8. Add pistachios and grate the cheese over the top.
