Leek 'n' potato soup
- 2 large potatoes, peeled + diced small,
- 2 large leeks, chopped,
- 2 tbsp veg oil,
- 2 large onions, diced,
- 3 tbsp heaped, flour,
- 1 1/2 pints vegetable stock
- 1 tbsp mixed herbs,
- 1 salt + pepper to taste,
- fry potatoes, leeks + onions in the oil until leeks are softening slightly.
- mix in the flour to cover the ingrediants.
- add herbs into the mix and stir well.
- add the stock slowly, a bit at a time, stirring as you go along.
- simmer for 30-40mins stirring frequently so it doesnt burn, until potatoes are cooked through.
- add salt + pepper to taste.
- serve as it is or blend into a smooth soup.
- best served with crusty bread.
