Leek 'n' potato soup

  1. fry potatoes, leeks + onions in the oil until leeks are softening slightly.
  2. mix in the flour to cover the ingrediants.
  3. add herbs into the mix and stir well.
  4. add the stock slowly, a bit at a time, stirring as you go along.
  5. simmer for 30-40mins stirring frequently so it doesnt burn, until potatoes are cooked through.
  6. add salt + pepper to taste.
  7. serve as it is or blend into a smooth soup.
  8. best served with crusty bread.
