Homemade Bacon Mayonnaise
- 1 packages Your favorite bacon
- 3 cup canola oil
- 6 tsp lemon juice
- 4 egg yolks only
- 4 tsp white vinegar
- 1 tsp dijon mustard
- 1 salt and pepper to taste
- In a pan cook your bacon until crispy, set bacon aside and reserve the fat.
- In a blender add your lemon juice, egg yolks, vinegar, dijon mustard and start blending on medium speed.
- Slowly start to drizzle in your reserved bacon fat and then your canola oil until the mixture starts to thicken (emulsify)
- Lastly crumble in your desired amount of the crispy bacon into your emulsion until they turn to small flecks.
- Refrigerate for an hour.
