  1. Roast the Serranos and the Poblano until blackened.
  2. Let rest, peel, and seed.
  3. Chop and place in the bowl of a blender.
  4. Add tomatoes, sauce, and the chipotles to the blender.
  5. Blend until desired consistency.
  6. Add more sauce if needed.
  7. Pour into another bowl.
  8. Stir in chopped onions and cilantro.
  9. Salt to taste.
