Meaty Pork Croquettes
- 3 large Potatoes
- 10 grams Butter
- 100 grams Ground pork
- 1 small Onion
- 2 tsp Oyster sauce
- 1 tsp Ketchup
- 1 pinch each Salt and pepper
- 1 Flour
- 1 Egg
- 1 Panko
- Chop the potatoes into about 12 pieces and soak in water.
- Put into a pan and pour enough water to cover them.
- Boil for about 10 minutes.
- Mince the onion while the potatoes are boiling.
- If you're confident in working quickly, you should also work through Step 5 at this time.
- When you can poke the potatoes through with a skewer, drain the hot water and let the excess moisture evaporate over high heat.
- (Make sure they don't burn!)
- Add butter while the potatoes are still hot.
- Use a masher to mash the potatoes.
- Season lightly with salt and pepper.
- Mash them into your preferred consistency and texture.
- Heat some vegetable oil in a frying pan.
- Saute the onion.
- Once translucent, add the ground meat and saute.
- Add oyster sauce and ketchup.
- Season with plenty of salt and pepper.
- Combine the ingredients prepped in Step 5 with the potatoes in Step 4 and mix thoroughly.
- Form 8 balls.
- Coat with flour, egg, and panko (in that order).
- Your hands won't get dirty if you pour the beaten eggs with a spoon and scoop the panko.
- Flatten slightly as you coat with panko.
- With your hands, form into flat balls.
- Deep-fry in 180C oil until golden brown to finish.
