Macrobiotic Lotus Root Burgers
- 70 grams Lotus root (minced)
- 1/4 large Onion
- 1/2 tsp Soy sauce
- 1 pinch Salt
- 240 grams Lotus root (grated)
- 50 grams Whole wheat flour (or cake flour)
- 1/2 tsp Salt
- 1 Soy sauce (for the finishing touch)
- Prepare both the minced lotus root and the grated lotus root.
- Mince the onion.
- Saute the ingredients.
- Heat a small amount of sesame oil in a frying pan, then saute the minced lotus root and onion until they're cooked through.
- Add the soy sauce and salt, then cool.
- While cooling, grate the lotus root.
- In a bowl, lightly mix (do not knead) the grated lotus root and the mixture from Step 2 with the whole wheat flour and 1/2 teaspoon salt.
- When the mixture can be gathered into a ball, divide into 6 equal portions, roll into balls, then flatten into patties.
- Heat 2 teaspoons sesame oil in a frying pan and slowly fry both sides of the paddies over low-medium heat.
- When they fry to a nice golden brown, swirl in the soy sauce, then it's ready to serve.
