Coca Cola Cake
- 18 14 ounces white cake mix
- 1 cup Coca-Cola, not diet
- 2 eggs
- 12 cup buttermilk
- 12 cup butter, melted
- 14 cup baking cocoa
- 1 teaspoon vanilla extract
- 1 12 cups miniature marshmallows
- 14 cup baking cocoa
- 12 cup butter, cut into small cubes
- 13 cup cola, not diet
- 4 cups confectioners' sugar
- 1 cup chopped pecans, toasted (optional)
- Preheat oven to 350 degrees.
- In a large mixing bowl combine cake mix, cola, buttermilk, melted butter, cocoa, and vanilla extract.
- Beat on medium speed for 3 minutes.
- Fold marshmallows into batter.
- Grease a 13 x 9 pan.
- Pour batter into pan.
- Bake for 35-40 minutes or until a toothpick inserted near the center comes out clean.
- Cool in pan on a wire rack for 15 minutes.
- In the meantime, combine cocoa and butter in a saucepan.
- Cook over low heat until butter melts.
- Stir in cola and stir until blended.
- Bring to a boil, stirring constantly.
- Remove from heat and add confectioners sugar.
- Stir until smooth.
- Fold in pecans if using.
- Spread over cake.
- Let stand 20 minutes before cutting.
