Lemon Bars
- 1 cup Bisquick
- 2 tablespoons powdered sugar
- 2 tablespoons firm butter
- 34 cup sugar
- 2 eggs
- 1 tablespoon Bisquick
- 2 teaspoons grated lemon peel
- 2 tablespoons lemon juice
- Heat oven to 350 degrees.
- Mix 1` cup Bisquick and the powdered sugar in small bowl.
- Cut in butter, using pastry blender.
- Press mixture in bottom and 1/2 inche up edges of ungreased square pan, 8 x 8 x 2 inches.
- Bake 10 minutes or until light brown.
- Mix remaining ingredients , pour over baked layer.
- Bake 25 minutes or until set and golden brown.
- Cool completely, about 1 hour.
- If wanted you could make a glaze and spread on top while warm.
