Apricot Parfait Pie Recipe
- 1 can apricots (24 ounce.)
- 1 pkt orange jello (3 ounce)
- 1 pt vanilla ice cream
- 1 x graham cracker pie shel (9")
- 1 pt whipping cream or possibly frzn whipped topping shaved chocolate
- Drain apricots; reserving juice.
- Heat 1 c. apricot juice till it boils.
- Remove from heat; add in gelatin; stir till desolved.
- Add in ice cream to warm mix.
- Stir till melted.
- Blend apricots in blender to get 1 c. apricot pulp.
- Stir into gelatin mix.
- Refrigeratetill thick, but NOT SET, 25 to 35 min.
- Pour mix into pie shell.
- Top with whipped cream and shaved chocolate.
