Apricot Parfait Pie Recipe

  1. Drain apricots; reserving juice.
  2. Heat 1 c. apricot juice till it boils.
  3. Remove from heat; add in gelatin; stir till desolved.
  4. Add in ice cream to warm mix.
  5. Stir till melted.
  6. Blend apricots in blender to get 1 c. apricot pulp.
  7. Stir into gelatin mix.
  8. Refrigeratetill thick, but NOT SET, 25 to 35 min.
  9. Pour mix into pie shell.
  10. Top with whipped cream and shaved chocolate.
  11. Wis/Gramma
