Green With Envy Banana-Spinach Muffins Healthy, egg free
- 2 cup all purpose flour (see note on bottom)
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 3/4 cup 1% milk
- 1/4 cup canola oil
- 2 tsp vanilla extract
- 6 oz fresh baby spinach
- 1/2 cup mashed banana
- 1 green sugar sprinkles or whatever color you choose.
- Preheat oven to 350F
- Weigh out spinach, remove bad pieces.
- U can use leaves, stems and all!
- Rinse spinach in cool/cold tap water.
- Lay spinach out on a large clean towel.
- Wrap and pat dry as much as possible.
- Leave wrapped and set aside until ready to use.
- Spray 6 jumbo muffin cups with baking spray.
- In a large bowl wisk together all dry ingredients except spinach.
- In a blender.. place milk,oil and vailla.
- Unwrap spinach and place into blender.
- Leaves, stems and all!
- Blend on high for 30 seconds to one minute or until spinach is completely pureed.
- Add mashed banana and "pulse" the blender to incorporate the banana but don't completely puree the banana.
- Pour wet spinach mix into the dry flour mix.
- Stir until just incorporated.
- Do not overmix!
- Evenly Fill muffin cups until almost full.
- Sprinkle green sugar sprinkles on top of muffin batter in the cups.
- (This is optional, its mostly for color contrast and look)
- Bake 25 to 30 minutes or until toothpick comes out clean.
- Let stand 5 minutes then transfer to wire rack for cooling.
- Serve warm or cool with or without butter.
- Enjoy!
- NOTES:
- For a sweeter muffin use fully ripened banana.
- For mine I used green unripened banana and was still fantastic.
- Though its harder to mash and doesn't create enough liquid so if using green banana add an extra 1/4 cup.
- For even healthier muffins.. sub whole wheat flour in same amount.
