Deep-Dish Apple Streusel Dessert
- Apple Filling
- 2 gal. Canned apple slices
- 1 qt. sugar
- 3 qt. water
- 3 cups raisins
- 3/4 cup instant tapioca
- 1-1/2 Tbsp. ground cinnamon
- 1-1/2 Tbsp. lemon juice
- 1-1/2 Tbsp. vanilla
- Streusel Topping
- 1 qt. flour
- 2 cups sugar
- 1 qt. Unsalted butter, softened
- Mix apples, sugar, water, raisins, tapioca and cinnamon in steam-jacketed kettle or large saucepot.
- Bring to boil on medium heat, stirring frequently; cover.
- Simmer 5 minutes or until thickened, stirring occasionally.
- Add lemon juice and vanilla; mix well.
- Pour into 4 half hotel pans (or 1/3 hotel pan for trial recipe).
- For Streusel Topping: Mix flour and sugar in bowl of electric mixer with fitted paddle attachment.
- Add butter; beat on low speed 1 minute or until mixture resembles coarse crumbs.
- Sprinkle evenly over apple mixture.
- Bake at 425F for 15 minutes or until topping is browned.
