AMIEs ORANGE Ricotta Fritters

  1. Beat the ricotta, eggs, rum and zest together in a medium bowl.
  2. Sift in the flour and baking powder and stir to.combine.
  3. Half fill a large, heavy-based saucepan with oil.
  4. Heat the oil to 180AC or until a piece of bread browns in 15 seconds when tested.
  5. Carefully drop tablespoon of ricotta mixture into the oil and fry in batches, turning until puffed and golden brown.
  6. Remove using a slotted spoon and drain on paper towel.
  7. Serve immediately, drizzled with honey and dusted with icing sugar.
