AMIEs ORANGE Ricotta Fritters
- 500 grams fresh ricotta cheese
- 3 large eggs, lightly beaten
- 1 tbsp finely grated orange zest
- 2 tbsp dark rum (if desired)
- 1/2 cup plain flour
- 1 tsp baking powder
- 6 tbsp honey
- 1 vegetable oil, for deep-frying
- 1 icing sugar, for dusting
- Beat the ricotta, eggs, rum and zest together in a medium bowl.
- Sift in the flour and baking powder and stir to.combine.
- Half fill a large, heavy-based saucepan with oil.
- Heat the oil to 180AC or until a piece of bread browns in 15 seconds when tested.
- Carefully drop tablespoon of ricotta mixture into the oil and fry in batches, turning until puffed and golden brown.
- Remove using a slotted spoon and drain on paper towel.
- Serve immediately, drizzled with honey and dusted with icing sugar.
