Sweet-Sour Turkey Salad
- 1 14 cups peaches or 1 14 cups apricot fruit spread
- 2 tablespoons cider vinegar
- 1 tablespoon reduced-soduim soy sauce
- 18 teaspoon ground ginger
- 6 cups torn mixed greens
- 6 ounces boneless cooked turkey breast, cup into thin bite-size strips (about 11/4 cups)
- 1 (11 ounce) can mandarin oranges, section drained or 2 medium oranges, sectioned
- 1 cup broccoli floret
- 1 cup cauliflower floret
- For dressing, in a small saucepan stir together spreadable fruit, vinegar, soy sauce, and ginger.n Cook and stir over low heat until bubbly.
- Remove from heat.
- Set aside to cool slightly.
- In a large mixing bowl toss together greens, turkey breast, orange sections, brocolli, and cauliflower.
- Divide salad among 4 plates.
- Drizzle with dressing.
