Take-Out Fattoush Bread Salad
- 2 garlic cloves, crushed
- 12 cup olive oil
- 3 tablespoons fresh lemon juice
- 14 cup chopped of fresh mint
- salt & freshly ground black pepper
- 3 (6 inch) pita bread, torn into 1-inch pieces
- 2 tomatoes, cut into 1/2-inch dice
- 1 cucumber, peeled and cut into 1/2-inch dice
- 14 cup chopped flat leaf parsley
- 14 cup chopped green onion
- Preheat the oven to 400 degrees .
- In a small bowl, combine the garlic, olive oil, lemon juice, and mint.
- Season with salt and pepper to taste and set aside.
- Place the pita pieces on a baking sheet and bake for 5 to 10 minutes, or until the pita is slightly browned.
- In a large bowl, combine the pita, tomatoes, cucumber, parsley, and green onions.
- Add the dressing and gently toss to coat.
- Allow the salad to sit for 15 minutes so the pita can absorb the flavors of the vegetables and vinaigrette.
- Make Ahead: Fattoush can be made up to 30 minutes ahead of time.
