Fairy cakes
- 4 oz margarine
- 4 oz caster sugar
- 2 medium eggs
- 6 oz self raising flour
- 9 oz icing sugar
- 3 tbsp cold water
- 1 tbsp sugar strands
- Preheat the oven to 200C
- Place 20 small baking cases onto two flat baking trays and put to one side for later
- In a large bowl, cream together the sugar and margarine with a wooden spoon until light and fluffy
- Crack the two eggs into a separate bowl and whisk together.
- Slowly beat this into the sugar/margarine mixture a little at a time
- Fold in the flour
- Place a heaped teaspoon of mixture into every baking case
- Bake in the oven for 15-20 mins then leave to cool
- To make the icing, sieve the icing sugar into a bowl and slowly add the water a little at a time until it becomes a smooth paste
- Once the cakes are cool put a little icing on the middle of each cake and sprinkle with sugar strands
