Malassadas

  1. Heat milk to lukewarm.
  2. Moisten yeast in lukewarm water.
  3. Add the yeast, salt, sugar and melted butter to the milk.
  4. Stir in part of the flour, beating well with a wooden spoon to prevent lumps.
  5. Add beaten eggs and remaining flour to form a soft dough.
  6. Cover the dough and set it in a warm place until it doubles in bulk.
  7. Heat oil to 350-degrees.
  8. Drop dough by the tablespoon into the hot oil and fry until evenly browned.
  9. Drain on absorbent paper and roll in sugar.
