Turkey Cutlets & Sweet Potato Fries
- 3 ounce LOUIS RICH CARVING BOARD Oven Roasted Turkey Breast
- 1 sweet potatoes
- 2 teaspoon canola oil
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon salt
- 5 piece/slice frozen asparagus spears
- 1 medium banana, sliced
- 1/2 cup lowfat frozen yogurt
- Heat oven to 400 degrees Fahrenheit; spray cookie sheet with vegetable oil spray.
- Place turkey cutlet on one end of cookie sheet; spray top of cutlet with vegetable oil spray and sprinkle with favorite herbs.
- Peel and slice sweet potato into thin slices.
- In a medium sized bowl, blend oil, brown sugar and black pepper.
- Transfer sweet potato slices into bowl with oil/brown sugar mixture; toss well and then place on cookie sheet.
- Place cookie sheet in oven.
- Turn sweet potato slices and turkey cutlets once after 10 minutes.
- Steam asparagus spears (1/4 pound = about 8 spears).
- Finish your meal with yogurt topped with a sliced banana.
