Turkey Cutlets & Sweet Potato Fries

  1. Heat oven to 400 degrees Fahrenheit; spray cookie sheet with vegetable oil spray.
  2. Place turkey cutlet on one end of cookie sheet; spray top of cutlet with vegetable oil spray and sprinkle with favorite herbs.
  3. Peel and slice sweet potato into thin slices.
  4. In a medium sized bowl, blend oil, brown sugar and black pepper.
  5. Transfer sweet potato slices into bowl with oil/brown sugar mixture; toss well and then place on cookie sheet.
  6. Place cookie sheet in oven.
  7. Turn sweet potato slices and turkey cutlets once after 10 minutes.
  8. Steam asparagus spears (1/4 pound = about 8 spears).
  9. Finish your meal with yogurt topped with a sliced banana.
