Taco Pasta
- 2 pounds Ground Beef
- 2 packages (about 1 Oz. Packet) Taco Seasoning
- 1 can (14 Oz. Size) Tomato Sauce
- 2 Tablespoons Tomato Paste
- 1 whole Green Bell Pepper, Chopped
- 1 whole Small Onion, Chopped
- 2 cloves Garlic, Minced
- 1 can (14 Oz. Size) Diced Tomatoes With Jalapenos
- 1 pound Rotini Pasta
- 1/2 heads Iceberg Lettuce, Shredded Or Thinly Sliced
- 1 cup Shredded Mexican Blend Cheese
- In a large skillet, brown ground beef and drain grease.
- Add the packs of taco seasoning and tomato sauce, paste and stir.
- Add green peppers, onion, garlic and tomatoes (drained).
- Stir and let simmer for 10 minutes or until veggies soften.
- While simmering, boil water for pasta, and cook per directions on box.
- Once pasta is drained, return pasta to same pot and add ground beef mixture.
- Stir to coat pasta.
- Shred or slice the iceberg lettuce really thin.
- Serve pasta topped with a sprinkle of cheese and lettuce.
